How many projects have you implemented in your portfolio?

This question relates to personal experience and has no technical answer. Usually, the number of projects implemented depends on your experience and level. In your resume or portfolio, you should list projects that demonstrate your skills and achievements, even if they are few. The quality and depth of participation are more important than quantity.
