The number of major projects implemented in practice depends on the developer's experience and the specifics of the work. For junior developers, it is usually 1-2 projects, possibly educational or small commercial ones. Middle developers typically have experience participating in several (3-5 or more) major projects, where they were responsible for significant modules or functionalities.

It is important not only the quantity but also the depth of participation: architecture development, integration with external services, optimization, and support. When answering an interview question, it is better to honestly indicate your experience and provide examples of projects, describing your role.
