To keep track of the total number of completed projects, I maintain a systematic list or portfolio where I record key details of each project: objectives, technologies, my role, results, and deadlines. This helps objectively assess experience and demonstrate it when necessary. In Node.js practice, it is also useful to keep links to repositories or deployment services to quickly showcase implemented solutions.
